Homemade Vanilla Frosting

Recently I whipped up a batch of sugar cookies. When it was time to frost and decorate them, I realized that I didn’t have any frosting. Normally, I have a container of store bought frosting in the fridge. Luckily I had some powdered sugar in the cupboard and I was able to make homemade frosting. It was quick and really complemented the sugar cookies! My son and I had a blast creating different colors and decorating the cookies.

This is the exact recipe I used. It is easy and quick to whip up your own frosting and it tastes delicious! You won’t want to buy frosting again! Here’s what you need.

Ingredients

  • 3 Cups Powdered Sugar
  • 1/3 Cup Butter, Softened
  • 1 tsp. Vanilla
  • 2 Tbsp Milk

Instructions

Combine powdered sugar and butter in a mixing bowl, stirring well.

Stir in vanilla and milk until smooth and thick.

If the frosting is too thick, stir in a little milk until you have the desired thickness.

If your frosting gets too thin, add in a little powdered sugar until you achieve the desired thickness.

Mix in food coloring to experiment with fun colors.

 

 

Store unused frosting in an airtight container. Place in the refrigerator up to a week.

Birthday Cake Pancakes Recipe | #NationalPancakeDay

Today is National Pancake Day. According to my Google search, IHOP started this celebration in 2006, and this year, they’ve raised $3.9 million for charity. That’s impressive. 🙂

In honor of National Pancake Day, I thought I would share my latest recipe with you guys. Birthday Cake Pancakes! My birthday was two weeks ago, but I like to celebrate the entire month of September. 🙂 These pancakes are delicious and a fun twist for breakfast or dinner.

Here’s What You Need:

For the Pancakes

  • 1 1/2 Cups Flour
  • 2/3 Cup Cake mix
  • 1 Tablespoon Sugar
  • 3/4 Teaspoon Baking powder
  • 1 Pinch Salt
  • 1 Egg
  • 1 Teaspoon Vanilla extract
  • 1 1/4 Cups Milk


For the Vanilla Glaze

  • 1 cup Powdered sugar
  • 1 Tablespoon Milk
  • 1/2 Teaspoon Vanilla extract
  • Assorted Sprinkles, Optional

 

Instructions:

  1. Combine flour, cake mix, baking powder, sugar, and salt into a bowl and mix well.
  2. Stir in egg, vanilla extract, and milk until smooth. The batter should be just like regular pancake batter. Not too thick, not too thin.
  3. Preheat skillet. I use an electric skillet and set it to 300 degrees.
  4. Coat skillet with non-stick cooking spray.
  5. Ladle batter onto skillet for larger pancakes. Use a tablespoon for medium sized pancakes.
  6. Allow batter to cook until bubbles begin to form on top. This takes about 2-3 minutes.
  7. Flip and cook for an additional 2-3 minutes. The pancake should be golden brown on each side.
  8. To make the Vanilla Glaze, stir powdered sugar, vanilla extract, and milk together until you have the desired consistency. You may need to add a little more powdered sugar or milk to achieve the desired consistency.
  9. Drizzle vanilla glaze onto each pancake and add sprinkles on top if desired.
